This is a delicious plant-based cream cheese substitute that works well with a variety of recipes, including the Vegan Stuff Shells featured on this website.
1/4 C Almonds (blanch if desired)
1 C Water
2 TBS Cornstarch (preferred) or Arrowroot
(A possible alternative is 1 TBS of Tapioca Flour & 1 TBS Potato Starch)
2 TBS Lemon Juice
1 tsp Yeast Flakes
1/2 tsp Salt
1.5 TBS Oil
Blanch almonds (Place almonds in a bowl and pour boiling water over them. Let them sit for a few minutes, then slip off the skins).
Blend all ingredients together until very smooth.
Cook over medium heat until this, clear and no longer frothy.
